½ tsp (2.5 ml) coarse sea salt
2 TBSP (28 grams) butter
2 cloves garlic
23 grams feta
2 TBSP (30 ml) fresh thyme
1 TBSP (15 ml) fresh parsley

Instructions
- Preheat oven to 400°F (204°C)
- Slice the sweet potatoes into rounds, about ½ inch (1.25 cm) thick
- Lay flat on a baking tray and drizzle with olive oil, ensuring they are well coated.
- Sprinkle with salt and roast in the oven for 25-30 minutes until they are fork-tender
- Melt butter in a saucepan on low heat on the stove.
- Add diced garlic and thyme and lightly sauté in the butter until the garlic becomes fragrant, swirling frequently.
- Remove potatoes from the oven and turn it to a broil setting at 400F° (204°C)
- Spoon the butter garlic sauce onto the potatoes
- Sprinkle with crumbled feta and place back in the oven for a few minutes until cheese is melty and the edges of the potato rounds are slightly crispy
- Garnish with fresh chopped parsley and some additional fresh thyme, and serve immediately.
