Ingredients

3 large sweet potatoes 

3 TBSP extra virgin olive oil 

½ tsp coarse sea salt

2 TBSP butter

2 cloves garlic 

4 oz. feta 

2 TBSP fresh thyme 

1 TBSP fresh parsley

3 TBSP (45 ml) extra virgin olive oil 

½ tsp (2.5 ml) coarse sea salt

2 TBSP (28 grams) butter

2 cloves garlic 

23 grams feta 

2 TBSP (30 ml) fresh thyme 

1 TBSP (15 ml) fresh parsley

Instructions

  1. Preheat oven to 400°F (204°C)
  2. Slice the sweet potatoes into rounds, about ½ inch (1.25 cm) thick
  3. Lay flat on a baking tray and drizzle with olive oil, ensuring they are well coated.
  4. Sprinkle with salt and roast in the oven for 25-30 minutes until they are fork-tender
  5. Melt butter in a saucepan on low heat on the stove.  
  6. Add diced garlic and thyme and lightly sauté in the butter until the garlic becomes fragrant, swirling frequently. 
  7. Remove potatoes from the oven and turn it to a broil setting at 400F° (204°C)
  8. Spoon the butter garlic sauce onto the potatoes
  9. Sprinkle with crumbled feta and place back in the oven for a few minutes until cheese is melty and the edges of the potato rounds are slightly crispy
  10. Garnish with fresh chopped parsley and some additional fresh thyme, and serve immediately.
