2 TBSP olive oil

6 eggs

1 TBSP chopped green onion

½ cup blue cheese

2 large firm tomatoes

1 TBSP dill

Instructions

  1. Combine eggs, onions, and blue cheese in a bowl.
  2. In a pan, heat oil for about a minute on low heat.
  3. Add this mixture to the pan and scramble.
  4. Slice tomatoes thinly to make the "bun".
  5. Put the scrambled mixture in between two slices of tomato that have been lightly spread with a teaspoon of mayo.
  6. Sprinkle dill on top of your tomato, and eat like a sandwich.
