Mum's Plain Pecan Apple Bread

This grain-free treat made with almond flour and pecans is naturally sweetened with pureed apples. Try making French toast with this bread- yum!

Ingredients

1 egg, beaten

2 cups almond flour

½ cup pecan flour

¾ cup unsweetened applesauce (1 or 2 ripe apples, cooked and pureed)

1 tsp baking soda

¼ tsp salt

about ¼ cup filtered water, enough to give the mixture a muffin batter consistency

55 g pecan flour

180 g unsweetened applesauce (from 1–2 ripe apples, cooked and pureed)

1 tsp (5g) baking soda

¼ tsp (1g) salt

60 ml filtered water, or enough to give the mixture a muffin batter consistency

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Beat all ingredients together.
  3. Line a long and narrow loaf tin with parchment paper and sides well greased with butter or olive oil.
  4. Pour batter into the loaf tin.
  5. Bake at 350°F (180°C) for 15 minutes then 320°F (160°C) for half an hour or until middle of loaf springs back when lightly pushed.
