Ingredients
1 ripened avocado
1 ruby red or pink grapefruit
optional: bed of spinach

ingredients
½ cup olive oil
¼ cup compliant balsamic vinegar
1 tsp compliant Dijon mustard

120 ml olive oil
60 ml compliant balsamic vinegar
1 tsp (5 ml) compliant Dijon mustard
Instructions
- Cut avocado in half and slice lengthwise. You can then turn the skin inside out (if it's not too ripe!) instead of having to peel it.
- Peel grapefruit and section it.
- Arrange slices of avocado and grapefruit on two plates and drizzle with dressing.
- Optional: Place the slices on a bed of baby spinach

- Shake ingredients vigorously in a jar to blend. You may need to adjust quantities to fit your taste.
