2-3 medium sized avocados

1 TBSP freshly squeezed lemon juice

2 cups half & half yogurt

½ cup honey

1 tsp vanilla

Instructions

  1. Pit the avocados and remove the fruit.
  2. Add the avocados, lemon juice, yogurt, honey, and vanilla to a blender and mix well.
  3. Place the mixture into the refrigerator and chill.
  4. Process the mixture in an ice cream maker according to manufacturer's directions. This mixture sets up very fast so it may take less time to process.
  5. For soft ice cream, serve immediately. Place in freezer for 3 to 4 hours for firmer texture.
