Instructions
- Crack eggs and mix together in a bowl with the chopped prosciutto, spinach, salt and pepper.
- On the stove top, grease an egg pan with the olive oil over medium heat, and pour in the egg mixture.
- Scramble the eggs over the stove by stirring until the eggs are cooked.
- Remove and serve immediately.
