Ingredients
1 small butternut squash or 1 medium acorn squash
2 Tbsp olive oil
½ tsp salt
½ tsp garlic powder
½ tsp smoked paprika

Instructions
- Heat oven to 400°F (204°C)
- Peel and deseed your squash of choice.
- Cut squash into ½ cubes.
- Mix olive oil and spices in a large bowl.
- Toss cubed squash in spice mixture.
- Spread squash evenly on a baking sheet.
- Roast for 20-25 minutes until the squash is tender and the outside is dark golden brown.
- Taste and add more salt/pepper if desired.
