2 cups dates

2 cups almonds, walnuts or peanuts

½ cup pumpkin seeds

2 tsp vanilla

¼ tsp kosher salt

Dried fruit

Instructions

  1. Make sure you remove the pits from your dates. Add them to your food processor along with all other ingredients. Blend until a dough begins to form. If it is too dry, add a teaspoon (5ml) of water at a time until it comes together.
  2. Take tablespoons of the dough and roll into balls. Store in the fridge.

Suggestions:

Blueberry Coconut Bites: Add ½ cup dried blueberries and ½ cup flaked coconut to the food processor before blending. Carrot Cake Bites: Add 1 cup baby carrots, ½ cup raisins, 2 tsp cinnamon and ½ tsp nutmeg before processing the ingredients together. Peanut Butter Cookie Bites: With the other ingredients, process in an additional ¼ cup peanut butter and ½ cup whole peanuts to the mix. Pumpkin Pie Bites: Measure 1/3 cup pumpkin or squash puree, 2 tsp cinnamon, ¼ tsp nutmeg, and ¼ tsp cloves and add to the food processor.
