1 cup millet grains

½ to ⅔ cup water

2 tsp salt

1½ tsp dried dill

1 medium carrot, finely chopped

1½ tsp mild curry powder

Optional: ½ bell pepper, chopped (omit for Low-FODMAP)

1½ tsp (7.5 ml) dried dill

1 medium carrot, finely chopped

1½ tsp (7.5ml) mild curry powder

Instructions

  1. Start by rinsing the millet grains thoroughly under cold water to remove any bitterness.
  2. Place the rinsed millet in a saucepan and add the water.
  3. Stir in the salt, dried dill, and mild curry powder.
  4. Add the finely chopped carrot (and bell pepper, if using) to the pot.
  5. Bring everything to a boil over medium heat, then reduce the heat to low and cover the pot. Let it simmer gently for about 8-10 minutes. The millet should absorb the water and become soft but still retain a pleasant, fluffy texture, and not mushy like a porridge.
  6. Once cooked, fluff the millet with a fork and adjust seasoning if needed.
