Ingredients

2 pounds salmon or bluefish

3 cups chopped tomatoes

1 cup chopped onion

1 cup chopped olives

1 large clove minced garlic

¼ tsp ground cumin

1 TBSP honey

¼ cup lemon juice

3 TBSP olive oil

1 TBSP chile powder

¼ tsp ground cloves

¼ tsp ground coriander

salt

pepper

600 grams chopped tomatoes

52 grams chopped onion

180 grams chopped olives

1 large clove minced garlic

¼ tsp (1.25 ml) ground cumin

1 TBSP (15 ml) honey

59 ml lemon juice

3 TBSP (45 ml) olive oil

1 TBSP (15 ml) chile powder

¼ tsp (1.25 ml) ground cloves

¼ tsp (1.25 ml) ground coriander

Instructions

  1. Sprinkle fish with salt and pepper and arrange in a baking dish.
  2. Preheat the oven to 350°F (180°C).
  3. Sauté the onions, garlic, and spices in oil for 5 minutes.
  4. Add tomatoes, honey, olives, and lemon juice and simmer 5-10 minutes until sauce thickens a bit.
  5. Pour sauce over fish.
  6. Season with more salt (if desired), pepper, and parsley.
  7. Bake 20 minutes or until the fish is cooked to desired tenderness.
