600 grams chopped tomatoes
52 grams chopped onion
180 grams chopped olives
1 large clove minced garlic
¼ tsp (1.25 ml) ground cumin
1 TBSP (15 ml) honey
59 ml lemon juice
3 TBSP (45 ml) olive oil
1 TBSP (15 ml) chile powder
¼ tsp (1.25 ml) ground cloves
¼ tsp (1.25 ml) ground coriander

Instructions
- Sprinkle fish with salt and pepper and arrange in a baking dish.
- Preheat the oven to 350°F (180°C).
- Sauté the onions, garlic, and spices in oil for 5 minutes.
- Add tomatoes, honey, olives, and lemon juice and simmer 5-10 minutes until sauce thickens a bit.
- Pour sauce over fish.
- Season with more salt (if desired), pepper, and parsley.
- Bake 20 minutes or until the fish is cooked to desired tenderness.
