Ingredients
2 cloves garlic
1 TBSP pure tomato paste
2 medium tomatoes, peeled and deseeded
3–4 medium potatoes
1–2 Tbsp olive oil
2 tsp salt
¾ cup plus 1 TBSP water
1½ tsp mild curry spices
Optional: fresh ginger and ground cumin (to taste)
Garnish: chopped chives or parsley (to taste)

200 ml water
1.5 tsp (7.5 ml) mild curry spices

Instructions
- Finely grind the garlic and mix it with the tomatoes, tomato paste, olive oil, salt, and curry spices. Sauté for 2–3 minutes.
- Peel the potatoes and add them to the mixture. Stir for another 2–3 minutes.
- Then add water and let it simmer on low to medium heat until cooked.
- Garnish with chives or parsley.
