Ingredients

2 cloves garlic

1 TBSP pure tomato paste

2 medium tomatoes, peeled and deseeded

3–4 medium potatoes

1–2 Tbsp olive oil

2 tsp salt

¾ cup plus 1 TBSP water

1½ tsp mild curry spices

Optional: fresh ginger and ground cumin (to taste)

Garnish: chopped chives or parsley (to taste)

Instructions

  1. Finely grind the garlic and mix it with the tomatoes, tomato paste, olive oil, salt, and curry spices. Sauté for 2–3 minutes. 
  2. Peel the potatoes and add them to the mixture. Stir for another 2–3 minutes. 
  3. Then add water and let it simmer on low to medium heat until cooked.
  4. Garnish with chives or parsley.
