Instructions
- Peel bananas and place in a medium bowl.
- Mash well with a fork.
- Add the eggs to the bowl and stir until you have a custard like consistency. The batter will be runny and have some small chunks of banana.
- Heat a griddle or large skillet over medium heat.
- Lightly coat with canola oil.
- When the pan is hot, spoon on 2 TBSP (30 ml) of batter for each pancake.
- Cook for 1 minute, until the bottoms are browned and golden when lifted.
- Gently flip and cook for another minute on the other side.
