Instructions

  • Cut 2-3 medium sized potatoes into small cubes.
  • Boil potatoes in water and salt.
  • Place potatoes in air fryer or roast in oven until crisp (around 10-15 minutes)
  • In a small pan, heat olive oil then add minced garlic, cilantro, lemon, and condiments.
  • Mix the potatoes with the garlic mixture.
  • Top with shallots and cilantro.
